The motto of owner and chef Tim Gilchrist is "Real food for real people" and that philosophy is evident in everything his cafe makes. It uses local, free-range, organic and sustainable ingredients whenever possible, and ingredients include real butter and real maple syrup. Everything is fresh and made-to-order by a kitchen staff which takes pride in what they make.
